by Barrie Silberberg This diet was named after a girl named Sara. Sara’s mother, Sandra was looking for a way to help her daughter recover from autism. Sandra discovered that by removing foods with lutein in Sara’s diet, she would show great improvements.
Foods highest in lutein are kale, spinach, mustard greens, yellow corn, broccoli, green peas, pumpkin, collard greens, summer (yellow) squash, carros, Brussels sprouts, red currants, green olives, peppers (green, orange and yellow), green beans (pod), chicken fat, egg yolk, plums, peaches, oranges, tangerines, avocados, kiwi and rhubarb. Lutein is often contained the peel of certain fruits and vegetables such as: cucumbers, pears and pineapples. Also the dark outer leaves of cabbage, lettuce and leeks contain lutein. Strawberries contain a red form called vitellorubin.
This diet also must eliminate artificial food dyes and aspartame. Some have to remove active dry yeast, monosodium glutamate and excessive supplements.
Proponents of Sara’s Diet encourage the use of the GFCF diet, as well.
